Fitness Bread With Avocado


Ingredients for 2 Bread Slices

2 Slices Wholemeal Bread
1–2 Twigs Fresh Mint
1–2 Twigs Fresh Parsley
4 tbs olive oil
Lemon Zest
Salt & Pepper
1 Large Tomato
½ Avocado

Pluck the herbs from the stalks and chop coarsely. Mix with the olive oil, add the lemon zest and season to taste with salt and pepper. Quarter the tomato, remove the seeds, dice and add to the oil. Peel the avocado, cut into slices and place the avocado slices on the bread slices. Drizzle with the oil.
